Chef Sathish’s culinary journey has never been about mastering just one cuisine. From the beginning, curiosity pushed him to explore different regions, cultures, ingredients and cooking techniques — constantly researching, learning and developing his own understanding of food.
INDIA — WHERE CURIOSITY BEGAN
India gave Chef Sathish his foundation, but his curiosity quickly took him beyond the boundaries of any one regional cuisine. He explored the diversity of Indian food — researching regional ingredients, spice combinations, traditional techniques and the stories behind them. This became an important part of his approach to cooking: not simply learning recipes, but understanding why a dish works and using that knowledge to develop new ideas.
SINGAPORE — LEARNING ACROSS CULTURES
Singapore became a major turning point in Chef Sathish’s culinary journey. Over ten years in one of Asia’s most multicultural food cities, he explored far beyond Indian cuisine — learning from Malay, Chinese, Thai, Korean and Indonesian food traditions. Through constant research, tasting, cooking and experimentation, he developed a broader understanding of Asian ingredients, techniques and flavour combinations. This experience taught him to look beyond the boundaries of individual cuisines and understand how different culinary cultures can inspire one another.
LONDON — REFINING THE CRAFT
London became the next stage in Chef Sathish’s evolution. Working within the city’s diverse and demanding restaurant scene pushed him to raise his standards in technique, presentation and the overall dining experience. Beyond his own kitchen, he continued to researc, dine at leading restaurants and learn from the standards, techniques and ideas shaping modern gastronomy.
With more than two decades of experience behind him, London became the place where everything began to connect. Indian foundations, years of Asian culinary exploration and modern restaurant techniques now come together in the way he develops dishes, flavours and dining concepts of his own.
TODAY — CREATING MY OWN CULINARY LANGUAGE
Today, Chef Sathish draws on more than two decades of learning across India, Singapore and London to create food with his own point of view. His approach is not defined by a single cuisine. Instead, he brings together Indian roots, knowledge of Asian cuisines, seasonal ingredients and modern techniques — choosing what best serves each dish and its story.
Research remains at the heart of his cooking. Every new idea begins with understanding the ingredient, its origin, the technique and the story he wants to tell. That process now allows him to move beyond interpreting existing dishes and develop original dishes, menus and dining concepts of his own.
